    Serves: 5

    • 1 punnet strawberries
    • 1 tablespoon caster sugar
    • 568ml double cream
    • 8 small meringue nests

    Prep:20min  ›  Extra time:20min chilling  ›  Ready in:40min

    1. Hull the strawberries and cut into quarters. Put on a plate and sprinkle with the sugar to bring out the juices. Place in the fridge for 20 to 30 minutes to do its work.
    2. Meanwhile, pour the cream into a mixing bowl and whip your cream to stiff peaks. Break up the meringue into pieces and add to whipped cream.
    3. Drain any excess juice from the strawberries then add the berries to the cream and stir. To serve, spoon into a serving glass.

Make sure you whip your cream to stiff peak otherwise you pavlova wont taste as good.
