Watermelon salad

    This is a stunningly tasty summer salad, really refreshing. Excellent with your BBQ. Originally came across this at a barbie in Australia while on holiday, it's always a firm favourite when I make it. Really easy recipe to follow. I add olives at the end but these are totally optional.

    Serves: 8 

    • 1 red onion, sliced into rings
    • 1 clove garlic, finely chopped (optional)
    • 2 limes
    • ground black pepper, to taste
    • 1 block feta cheese
    • 1/2 watermelon
    • 1 bunch flat leaf parsley
    • 1 to 2 tablespoons olives green and black, pitted (optional)

    1. Combine the red onion and garlic in a large salad bowl. Squeeze the juice of both limes over onion and garlic, season with black pepper then toss together and set aside.
    2. Cube the feta cheese and watermelon add to salad bowl with onions and garlic. Roughly tear up the parsley and add to salad bowl with other ingredients. Toss and serve straight away with your favourite BBQ foods, excellent with chicken.


    Due to the water content in this recipe if you have leftovers it doesn't really keep well. All goes a bit watery, but if it's anything like mine usually no leftovers, adjust the amounts if you need more or less. It's always best made fresh but the onion garlic and lemon juice mix can be done in advance even better if left for a while to allow the lime juice and garlic to infuse the onion.
