Juicer pulp carrot, orange and maple muffins

    If you have a juicer, don't waste the pulp, you could be using it to make delicious muffins and breads! I got a pulp muffin recipe off a juicing blog and tweaked it to include maple, and it resulted in these absolutely delicious muffins. Fresh carrot juice is tasty and healthy - next time you make it, use the pulp for these carrot orange maple muffins.

    Makes: 12 muffins

    • juicer pulp from 8 large carrots
    • 260g plain flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 100g caster sugar
    • 2 eggs
    • 150ml orange juice (fresh squeezed if you can)
    • 110g butter, melted
    • 4 tablespoons maple syrup

    1. Put 8 large carrots into the juicer and collect the pulp. Drink carrot juice, be happy.
    2. Preheat oven to 180 C / Gas 4. Line a 12 hole muffin tin with paper cases.
    3. Combine flour, baking powder, bicarb, salt, and sugar in a large bowl and mix together.
    4. Stir in the eggs, orange juice, melted butter, and maple syrup. Add carrot pulp and mix until combined. Spoon into the prepared paper cases filling to 3/4 full to ensure room for a good rise.
    5. Bake muffins in the preheated oven for 20 to 25 minutes. Allow to cool on a wire rack, and enjoy!
