Soy-dressed green beans

    Young, thin beans are tossed in soy sauce with fresh ginger in this stylish side dish. It tastes fabulous with grilled meats such as lamb.

    Ingredients
    Serves: 4 

    • 500 g (1 lb 2 oz) green beans
    • Salt
    • 2 cloves garlic, finely chopped
    • ½ teaspoon finely chopped ginger
    • 2 tablespoons soy sauce
    • ½ teaspoon sugar

    Method

    1. Line up the green beans in bunches and cut them in half crossways.
    2. Bring a saucepan of water to the boil, then add the beans and a pinch of salt and return to the boil. Reduce the heat and simmer for 3 minutes, or until the beans are tender.
    3. Place the garlic, ginger, soy sauce and sugar in a serving bowl and stir them together until the sugar has dissolved. Drain the beans, toss them into the dressing, then serve.
    4. Variation: substitute sliced carrots, runner beans or baby corn cobs, adjusting the cooking time in Step 2 until they are tender.
