Pistachio and apricot powerballs

    Delicious pistachio and apricot power balls are easy to make, delicious and healthy. Perfect as an after gym snack, picnic or to make with the kids in the summer holidays.

    Makes: 12 powerballs

    • 100g shelled unsalted pistachio nuts
    • 140g ready to eat dried apricots
    • 2 tablespoons rolled oats
    • 1 tablespoon chia Seeds
    • 4 tablespoons peanut or other nut butter

    1. Put all the ingredients in a blender and blitz until well combined. With wet hands, squash the mixture into balls about the size of a walnut. Place on a tray and chill in the the fridge to set. Transfer to an airtight container to store for up to 4 days.

    These are really good - sweet and savoury at the same time. I halved all quantities as I prefer to make them little and often.  -  27 Aug 2016
