1 kg (2 lb 4 oz) large potatoes
1½ teaspoons sunflower oil
2 tablespoons fresh wholemeal breadcrumbs
A pinch of cayenne pepper
½ teaspoon ground cumin
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon dried thyme

Heat the oven to 220°C (425°F, gas mark 7). Scrub the potatoes, leaving the skins on, and cut each one lengthways into eight wedges. Place them in a large mixing bowl, add the oil and toss to coat the wedges thinly and evenly.
Mix together the breadcrumbs, cayenne pepper, cumin, garlic salt, paprika, pepper and thyme in a large bowl. Add the potatoes and toss until they are evenly coated.
Arrange the wedges in a single layer on a large nonstick baking sheet and bake for 35-40 minutes until they are golden brown and crisp. Serve them hot.
Variation: serve the wedges as a snack with some low-fat Greek yoghurt for a dip.
