Hot Cajun potato wedges

About this recipe: These easy-to-make spicy wedges make a tasty side dish or a flavoursome snack.

Serves: 6 

  • 1 kg (2 lb 4 oz) large potatoes
  • 1½ teaspoons sunflower oil
  • 2 tablespoons fresh wholemeal breadcrumbs
  • A pinch of cayenne pepper
  • ½ teaspoon ground cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme

  1. Heat the oven to 220°C (425°F, gas mark 7). Scrub the potatoes, leaving the skins on, and cut each one lengthways into eight wedges. Place them in a large mixing bowl, add the oil and toss to coat the wedges thinly and evenly.
  2. Mix together the breadcrumbs, cayenne pepper, cumin, garlic salt, paprika, pepper and thyme in a large bowl. Add the potatoes and toss until they are evenly coated.
  3. Arrange the wedges in a single layer on a large nonstick baking sheet and bake for 35-40 minutes until they are golden brown and crisp. Serve them hot.
  4. Variation: serve the wedges as a snack with some low-fat Greek yoghurt for a dip.

Brillaint taste, and so simple to make! Served it up with oven-baked fish fingers and some steamed broccoli. Potatoes were so good that I kept coming back for more - 22 Apr 2012
