    About this recipe: A really tasty full breakfast in nice crusty ciabatta bread.

    Serves: 4 

    • 4 to 6 rashers bacon
    • 4 to 6 traditional pork sausages
    • 6 plum tomatoes. chopped
    • 3 tablespoons tomato puree
    • 2 hard boiled eggs
    • 6 medium closed cup mushrooms, chopped
    • 1 (500g) bag of Ciabatta bread mix (i use Wright's but I'm sure you can use others)
    • 1 table spoon of extra virgin olive oil

    Prep:30min  ›  Cook:25min  ›  Ready in:55min 

    1. Grill or fry your bacon and sausages.
    2. While that's cooking make up your ciabatta dough by following the instructions on the packet. Leave to rise for approximately 25 minutes.
    3. Roll out ciabatta dough to about a 20x30cm rectangle. Spread the tomato puree on top. Chop the cooked bacon, sausage and egg and sprinkle on top along with the mushrooms and tomatoes.
    4. Roll up to form a long sausage shape, then twist round to make a snail shape.
    5. Place on a floured baking tray and place in a pre-heated oven at about 220 C / Gas 7 and bake until golden, about 25-30 mins. This will go down a storm the morning after a party!!! Enjoy!!!!!
