Potato wedges with cheese and bacon

    A really tasty and delicious recipe perfect to be accompanied with chicken! My mum used to make this recipe for movie and football nights! Enjoy

    Serves: 4 

    • 4 large potatoes, cut into thick wedges
    • 60ml olive oil
    • salt, to taste
    • pepper, to taste
    • garlic powder, to taste
    • paprika, to taste
    • dried oregano, to taste
    • 240g bacon, about 6 rashers cut into small cubes
    • 250g grated Red Leicester cheese
    • 25g chopped spring onions
    • 2 to 4 tablespoons soured cream

    1. Preheat the oven to 200 C / Gas 6.
    2. Bring a large saucepan of water to the boil over a high heat. Add the wedges to the saucepan and boil for 6 to 8 minutes. Drain in a colander.
    3. Put the wedges in a deep baking dish, add the olive oil and toss together so that the wedges will all be coated in oil. Sprinkle over the salt, pepper, garlic, paprika and oregano.
    4. Bake in the preheated oven for 40 minutes (stirring the wedges when 20 minutes has passed) until tender and golden brown.
    5. In the meantime, fry the bacon in a frying pan over a medium heat. Drain any excess fat and set aside.
    6. When wedges are ready, add the cheese, bacon and the spring onions.
    7. Return to oven and bake until cheese melts. Remove from the oven and serve with soured cream.


    You can increase or decrease the amount of herbs according to your preferences.
