About this recipe: Lentils, red onion, tomatoes and cucumber are tossed in a tangy vinaigrette made with olive oil, lime juice and apple cider vinegar. Fresh mint makes a lovely addition if you have any. It's a quick and easy salad that's perfect for picnics or lunch.


Serves: 6 

  • 1 (400g) tin lentils, drained or cooked lentils
  • 1 red onion, diced
  • 2 tomatoes, diced
  • 2 small cucumbers, diced
  • 60ml olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lime juice
  • salt and ground black pepper to taste

  1. Combine lentils, onion, tomatoes and cucumbers together in a bowl.
  2. Whisk olive oil, vinegar, lime juice, salt and black pepper together in a separate bowl.
  3. Pour dressing over lentil mixture; stir to coat.
  4. Chill for 15 to 20 minutes before serving for best results.
