    About this recipe: Light, fragrant and sophisticated biscotti with delicious orange and almond flavours. This is a recipe I have been using for years and it never fails to disappoint! Add a drop or two of almond and orange extracts for a deeper flavour.

    Makes: 18 servings

    • 200g caster sugar
    • 115g butter, softened
    • 1 tablespoon orange zest
    • 2 eggs
    • 440g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 35g flaked almonds

    1. Preheat oven t0 180 C / Gas 4.
    2. Beat sugar, butter, orange zest and eggs in large bowl. Stir in flour, baking powder, salt and almonds.
    3. Shape half of dough at a time into rectangle, 25 x 8cm (10 x 3 in), on ungreased baking parchment. Place onto a baking tray.
    4. Bake about 20 minutes or until a skewer inserted in centre comes out clean. Remove from the oven and cool on baking tray for 15 minutes.
    5. Cut into 1.5cm (1/2 in) slices. Place slices cut sides down on baking tray.
    6. Bake about 15 minutes or until crisp and light brown. Remove from baking tray and allow to cool completely on a cooling rack before serving.
