Cream butter and sugar until well combined, then mix in the egg. Sift in flour, bicarb and ginger; mix well.
Knead dough on a lightly floured surface adding more flour if necessary. Roll out dough thinly then use a shaped cutter to create your gingerbread men. Place the men on a lightly greased tray.
Bake in a preheated 180 C / Gas 4 oven for 15 minutes. Cool on a wire rack before decorating.
Biscuit and cookie dough that is chilled before baking will hold its shape better. If you chill this gingerbread dough before rolling and cutting, the biscuits will have sharper, cleaner edges.
