Sponge cake with icing

    A recipe for a classic plain sponge cake with a simple icing. Perfect for a quick cake fix! Decorate with hundreds and thousands or chocolate sugar strands, if liked.

    Makes: 1 sponge cake

    • 110g (4 oz) butter or margarine, room temperature
    • 110g (4 oz) self raising flour
    • 110g (4 oz) caster sugar
    • 2 eggs
    • 55g (2 oz) icing sugar
    • 1 tablespoon water

    1. Cream together the butter and sugar till light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the flour till smooth. Grease a sandwich tin and pour in the cake mixture.
    2. Bake in a preheated 180 C / Gas 4 oven for 20 to 30 minutes, or till risen and a skewer inserted in the centre comes out clean. Remove from oven and let cool.
    3. While your cake is cooling make your icing by combining the icing sugar with 1 tablespoon of water. Stir till smooth and runny. Add more water to thin the icing, or more sugar to thicken, if needed.
    4. Drizzle the icing over the top of the cooled cake, and spread over the edges and sides.
