About this recipe: This tasty meatloaf for two is full of flavour, thanks in no small part to a melty, cheesy centre. If you do the chopping for them, it's something the kids can make. Timings are approximate; when the loaf is firm and the juices are caramelised in the bottom of the pan it's done.
If you fancy you could put some roughly chopped vegetables in the baking tray - peppers, onions, courgettes, tomatoes - toss them in a little oil and throw them in for the last 20 minutes.
