Cheesy bacon meatloaf

    This tasty meatloaf for two is full of flavour, thanks in no small part to a melty, cheesy centre. If you do the chopping for them, it's something the kids can make. Timings are approximate; when the loaf is firm and the juices are caramelised in the bottom of the pan it's done.

    Serves: 2 

    • 150g minced pork
    • 2 rashers streaky bacon, chopped
    • 1/2 onion, finely chopped
    • 1 to 2 red or green chillies, finely chopped
    • 1 clove garlic, chopped
    • 1 egg white
    • 1 small handful breadcrumbs, bulgur wheat or cornmeal
    • 8 tablespoons sweet and spicy sauce, divided
    • 1/4 chicken stock cube
    • 2 thumb-sized pieces cheese

    1. Combine minced pork with the bacon, onion, chilli, garlic, egg white, breadcrumbs, 1 tablespoon of the sweet and spicy sauce and the stock cube. Mix well.
    2. Form mixture into a rectangle about 1.5cm thick. Lightly grease a large sheet of foil, then place the rectangle on top in the centre of the sheet.
    3. Place the cheese near to one end of the rectangle and lift the foil at the same end to roll up into a loaf (like you would a Swiss roll). Seal the ends of the rolled loaf then close the foil.
    4. Bake in a preheated 180 C / Gas 4 oven for 30 to 40 minutes.
    5. Carefully remove foil. Spoon remaining sauce over the top of the loaf. Increase oven temperature to 200 C / Gas 6 and cook the meatloaf, uncovered, for a further 10 to 20 minutes. When the loaf is firm and the juices in the tray are caramelised it's done.


    If you fancy you could put some roughly chopped vegetables in the baking tray - peppers, onions, courgettes, tomatoes - toss them in a little oil and throw them in for the last 20 minutes.
