Carrot salad with lemon honey dressing

    This crunchy carrot salad is a perfect side dish or light lunch with wholemeal bread. The flavour will improve if you leave it overnight.

    Serves: 4 

    • For the dressing
    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • lemon juice, about 1 or 2 tablespoons
    • 1 teaspoon honey
    • 1 pinch of salt
    • For the salad
    • 750g carrots, peeled and coarsely grated
    • 100g raisins
    • 30g chopped almonds
    • 1/2 bunch parsley, coarsely chopped

    1. Mix olive oil, balsamic vinegar, lemon juice, honey and salt in a bowl.
    2. Add grated carrots, raisins, almonds and parsley; mix well until the carrots are evenly coated with dressing.
