Quick and easy tomato soup

    In less than 30 minutes, you can have a delicious homemade tomato soup to serve! If you have lots of really ripe fresh tomatoes, you can use them instead of tinned tomatoes.

    Serves: 6 

    • 2 tablespoons olive oil
    • 1 tablespoon unsalted butter
    • 1 large onion, cut into pieces
    • 1 clove garlic
    • 1 1/2 tablespoons plain flour, to thicken
    • 2 (400g) tins peeled tomatoes
    • 750ml chicken stock
    • 1 tablespoon sugar, or to taste
    • salt and black pepper, to taste
    • 3 tablespoons freshly chopped chives

    1. Heat oil and butter in a large pot. Add onion and stir until softened, about 5 minutes. Stir in garlic and 1 1/2 tablespoons plain flour.
    2. Add tomatoes and chicken stock; bring to the boil. Simmer for 15 minutes. Season to taste with sugar, salt and pepper.
    3. Puree in a blender and return to pot.
    4. Garnish with freshly chopped chives and serve.

    My first attempt with this recipe and it is an absolute winner. Using store cupboard ingredients it is extremely simple, healthy and cheap to make. I used two tins of Italian Cherry Tomatoes and stuck to the recipe except for the chives. I "Filled it out"for lunch by using some Tortellini and fresh Basil along with crusty bread. The only change I would make is to change the sugar and replace this with a small grated carrot for sweetness. My wife, who is a Tinned Tomato soup fan tried it and was very impressed.  -  14 Jun 2016

    Absolutely delicious and I've yet to eat it! Just tasted a few spoonfuls (can't stop) so I will blend it in the morning once it's cooled. Nice simple recipe without exotic ingredients - gracias  -  03 Apr 2016
