My first attempt with this recipe and it is an absolute winner. Using store cupboard ingredients it is extremely simple, healthy and cheap to make. I used two tins of Italian Cherry Tomatoes and stuck to the recipe except for the chives. I "Filled it out"for lunch by using some Tortellini and fresh Basil along with crusty bread. The only change I would make is to change the sugar and replace this with a small grated carrot for sweetness.

Absolutely delicious and I've yet to eat it! Just tasted a few spoonfuls (can't stop) so I will blend it in the morning once it's cooled. Nice simple recipe without exotic ingredients - gracias - 03 Apr 2016
