Potato, pumpkin and carrot soup

About this recipe: This is a very easy, basic soup recipe that I use during the colder months. You can use vegetable stock if you prefer.


Serves: 4 

  • 1 litre beef stock
  • 200g pumpkin, diced
  • 200g carrots, sliced
  • 200g potatoes, peeled and sliced
  • salt and black pepper, to taste

Prep:10min  ›  Cook:30min  ›  Ready in:40min 

  1. In a deep saucepan, combine all the ingredients and simmer 30 minutes until the vegetables are cooked. Leave to cool down before blending in a food processor.
  2. Season with salt and pepper. Reheat and serve.
