Slow cooker chicken cacciatore

This is such a simple way to cook chicken cacciatore. This recipe calls for chicken breasts but you can use any or a mixture of chicken cuts. The slow cooker was designed for recipes exactly like this!

Ingredients
Serves: 4
- 1kg chicken breast, diced
- 2 onions, diced
- 1 red pepper, seeded and diced
- 1 green pepper, seeded and diced
- 1 courgette, diced
- 80g pitted olives
- 2 or 3 fresh basil leaves, sliced
- 1/2 teaspoon dried rosemary
- salt and pepper, to taste
- 2 (400g) tins chopped tomatoes
- 250ml white wine or chicken stock

- Add the diced chicken, onion, peppers, courgette and olives to the slow cooker. Add basil and rosemary and season with salt and pepper. Pour over the tinned tomatoes and white wine.
- Set the slow cooker to medium and leave for 6 hours.
