Carrot and peanut salad

    An easy grated carrot salad with chopped peanuts and fresh coriander. So delicious!

    Serves: 4 

    • 220g grated carrots
    • 25g freshly chopped coriander
    • 1 tablespoon chopped peanuts
    • 2 teaspoons lemon juice
    • 1 teaspoon sugar
    • 1/2 teaspoon salt
    • fresh coriander leaves, for garnish

    Prep:20min  ›  Extra time:10min marinating  ›  Ready in:30min 

    1. Toss carrots, chopped coriander and chopped peanuts together in a large bowl.
    2. Stir lemon juice, sugar and salt into carrot mixture.
    3. Set aside just for long enough to allow the sugar to dissolve, about 10 minutes.
    4. Garnish with fresh coriander leaves to serve.

    Had a friend over for lunch today and served this. "WOW," is what we said. This simple little carrot salad is loaded with flavor, and on top of that, it's so darn easy AND healthy for you (41 calories, 1.2g fat & 7.2g carbs).     This recipe is a winner. Made it as written first time, and found it a touch salty, so I cut back on that the next time. Today I was short on cilantro, only had 1/4 I used 1/4 cup of mint also. Still a winner. I think this is recipe that you can tweak to fit your individual taste, all the while enjoying a healthy treat.
