Courgette and red onion salad

    A lovely salad with thin slices of courgette, red onion, fresh mint and basil. Use a spiraliser or potato peeler to slice the courgettes as thinly as possible. I like to blanch the red onion but it's not completely necessary.

    Serves: 6 

    • 800g courgettes, sliced into ribbons or spirals
    • ½ red onion, very finely chopped or thinly sliced
    • 4 tablespoons extra virgin olive oil
    • pinch of salt
    • freshly ground black pepper
    • 1-2 teaspoons fresh lemon juice
    • ½ teaspoon grated lemon rind
    • 1 tablespoon finely chopped mint
    • 1 tablespoon finely chopped basil

    1. Bring a pot of water to the boil. Place the red onion in a sieve and blanch in the boiling water for 1 minute. Drain and cold water and set aside.
    2. Place the courgette ribbons in the boiling water and cook for 30 seconds or so, then remove and plunge into cold water to cool them down completely. Drain and place in a salad bowl.
    3. Drain and place in a salad bowl. Add red onion and fresh herbs.
    4. Mix olive oil, salt, pepper, lemon juice and lemon rind; pour over the salad and chill for 30 minutes before serving for best results.
