Vegan apricot smoothie

    A yummy smoothie to enjoy when apricots are in season. It's a vegan smoothie but you could easily use dairy milk, if preferred.

    Serves: 2 

    • 4 apricots, stones removed
    • 1 banana
    • 125ml almond or soya milk
    • 1 pinch ground cinnamon

    1. Place the apricots, banana and milk into a bender and puree until smooth, adding more milk if needed to achieve your desired consistency. Pour into a glass and sprinkle over the cinnamon.
