Cod in tomato and white wine

About this recipe: Easy, but delicious. Great for those watching their health and for those that want a decent feast!

Ingredients
Serves: 2 

  • 6 vine tomatoes
  • 1 tablespoon cooking oil
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, chopped
  • 1-2 red chillies, deseeded and chopped
  • salt and pepper to taste
  • smaller handful of parsley, chopped
  • handful of basil, chopped
  • 250ml white wine (or more if adventurous)
  • 2 cod loins (or any hearty white fish)
  • 8 to 10 king prawns (uncooked, but peeled if possible)

Method

  1. First prepare the tomatoes: Peel tomatoes by slicing a cross in the top, then plunging in boiling water for 2 minutes. Then plunge in cold water for 1 minute to ease peeling, and chop roughly. (Otherwise, simply use tinned tomatoes, which are already peeled!)
  2. Add oil to frying pan on low heat. Add onion and garlic and saute for 2 minutes. Add chillies and chopped tomatoes. Reduce till little liquid remains.
  3. Pour in the wine and reduce for a further 3 minutes over medium heat. Add salt, pepper, parsley and basil. Finally add the cod and cover with a lid.
  4. Turn after 5 minutes and cook for a further 3 minutes (still covered). Add prawns to sauce and re-cover. Cook for further 2 minutes, add salt/pepper to taste.
  5. Serve with pasta, new potatoes or salad for the health conscious.

Alternatives to cod:

Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

This was very easy and delicious. I almost made it without prawns but I’m glad I didn’t as they were the best part. Think I may have over-reduced the liquid at the first stage or under seasoned it as the cod was a tiny bit lacking in flavour. I attribute this to my mistakes rather than the recipes though as, as I said, the prawns were outstanding. Guess I just got the sauce on to them better. - 18 Apr 2013
