About this recipe: An all-purpose spice mix inspired by a recipe I got for traditional Hawaij, which is from Yemen and also popular in Israel. A simple blend of spices that has become one of our favourite seasonings. I use this as a rub for chicken a lot, but it is also great for rice, fish, pork, prawns and mixed veggies.

Makes: 10 tablespoons hawaij

  • 3 tablespoons coarsely ground black pepper
  • 3 tablespoons ground cumin
  • 1 1/2 teaspoons turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon sumac
  • 1/4 teaspoon coarse sea salt (optional)

  1. Combine pepper, cumin, turmeric, cardamom, sumac and salt together in a bowl. Store in an airtight container for up to 6 months.
