About this recipe:An all-purpose spice mix inspired by a recipe I got for traditional Hawaij, which is from Yemen and also popular in Israel. A simple blend of spices that has become one of our favourite seasonings. I use this as a rub for chicken a lot, but it is also great for rice, fish, pork, prawns and mixed veggies.
Makes: 10 tablespoons hawaij
3 tablespoons coarsely ground black pepper
3 tablespoons ground cumin
1 1/2 teaspoons turmeric
1 teaspoon ground cardamom
1 teaspoon sumac
1/4 teaspoon coarse sea salt (optional)
