Awesome fruit and nut bars

    If you love the taste of Nakd bars but you’re not so keen on the high price, I have a treat for you – and you won’t believe how easy these are to make. This is the basic recipe for the bars, but you can add whatever flavourings you want. I’ve used vanilla, but I suggest experimenting with mint, almond and coffee flavourings as well – I intend to! You can also change the fruit and nuts used – just keep the proportions the same. Any other suggestions welcomed, please comment below. Note: you will need a food processor for this recipe.

    Makes: 12 bars

    • 200g ready to eat pitted dates
    • 70g raisins
    • 170g cashew nuts
    • 2 tablespoons cocoa powder
    • 2 teaspoons vanilla extract

    1. Place all ingredients in food processor, and process until the ingredients are all combined – the mix should be sticky, there should be no obvious lumps of fruit or nuts. Depending on your food processor this can take a while – mine took a minute or so to process to the required level.
    2. Line a tray or dish with cling film, and scrape the mix into the dish. Press down hard with the back of a spatula to flatten the top. The mix should be about 2cm (1 in) in height.
    3. Place in the fridge for at least 30 minutes before cutting into 12 bars. The bars can be wrapped individually, kept in airtight container (separated with cling film if necessary) in the fridge, or even frozen, if you find you can’t stop yourself eating them.
