About this recipe:Simple tasty dish with a twist, full of flavour, very filling, good twist for fussy children who don't like their veg as it is easily hidden. A winner in my home always, I always use lashings of cheese but if you don't like yours as cheesy just reduce the amount you put in; the crispy topping gives it that extra special taste and crunch.
1 handful fresh coriander and parsley, finely chopped
3/4 loaf of either fresh or stale bread, roughly chopped
250 to 300g creme fraiche
500g Cheddar cheese, grated

Preheat the oven to 180 C / Gas 4.
First place your macaroni, cauliflower and broccoli in a saucepan with enough boiling water so that everything is covered and turn heat to high. Add salt and bring to the boil, turn down heat and cook until nearly soft.
Put a little olive oil in a frying pan and fry the bacon bits with a clove of garlic and salt and pepper, set aside when done.
Using a food processor to make the topping, throw in a handful of parsley and coriander, salt and pepper, bacon bits and your bread and blend; add a wee bit of olive oil while mixing. Job done set aside.
When your macaroni and veg are ready, drain saving a breakfast bowl full of the starchy water. Transfer to a good size oven proof dish, spread your veg around then use a potato masher to break up the veg and mix round.
Then add your bowl full of starchy water, mix in remaining garlic, your pot of crème fraiche, all the cheese, sea salt and black pepper and mix round well. Add your crumble mixture evenly on top (keep away from the edges as it burns quickly)
Bake in the top shelf of the oven for 20 minutes or until you can see cheese bubbling at the edges. Simple and tasty! Remove from the oven and dish into 6 generous adult portions. Also if you have family coming in all different times you can make separate portions as above, exactly same preparation.
