Finely chop the mango, onion, jalapeño (seeds removed to reduce spice if desired) and mix with the coriander leaves, lime zest and juice, lemon juice and sugar. Add salt and pepper to taste and add a splash of olive oil. Place in a bowl and leave to chill - best served cold.
