Simple mango salsa

    Use it on burgers, make a gourmet hot dog or like here, put it in a crispy chicken wrap! I also put hummus in one and balsamic vinegar in another of these wraps - both incredibly tasty.

    Serves: 4 

    • 300g fresh mango
    • 1 whole large red onion
    • 1 large green jalapeño
    • 10 to 20g fresh coriander leaves
    • zest and juice of 1/2 lime
    • juice of 1/2 lemon
    • 1 teaspoon caster sugar
    • salt and pepper to taste
    • drizzle olive oil

    1. Finely chop the mango, onion, jalapeño (seeds removed to reduce spice if desired) and mix with the coriander leaves, lime zest and juice, lemon juice and sugar. Add salt and pepper to taste and add a splash of olive oil. Place in a bowl and leave to chill - best served cold.
