Super easy vegan noodle soup

    It doesn't get easier than this, all ingredients go in one pot at the same time and all you need to do is wait! This soup is so simple and yet very comforting.

    Serves: 4 

    • 1L water
    • 40g nutritional yeast
    • 1 teaspoon salt
    • 1 teaspoon toasted sesame oil
    • 1 teaspoon onion powder
    • 1/4 teaspoon paprika
    • 3/4 teaspoon garlic granules
    • 1/2 teaspoon turmeric
    • 1 (400g) tin chickpeas, drained
    • 4 tablespoons minced fresh parsley
    • 50g white mushrooms, sliced
    • 100g angel hair pasta

    1. Combine all of the ingredients, except the pasta, into a large saucepan over a high heat and bring to the boil. Add the pasta and cook according to the instructions on the packet, or until al dente. Remove from the heat, taste and adjust seasoning if needed. Ladle into warmed bowls and serve hot.
