Slow cooker cheesy potatoes

    Scalloped potatoes, covered in cheese sauce and ready in 4 hours. Easily adaptable with extra ingredients. Yum. Really lovely side dish but you could add bacon or ham to make it a main meal. It would also be nice with leeks and tomatoes.

    Serves: 6 

    • 4 large potatoes, thinly sliced
    • 1 to 2 onions, finely diced or sliced in rings
    • 2 to 3 cloves garlic, minced
    • 250 to 300g cheese sauce (packet, jar or homemade)
    • 1 to 2 handfuls grated cheese of your choice (e.g. Cheddar)
    • salt and pepper, to taste

    1. Combine the onion and garlic in a bowl and mix.
    2. Spray the slow cooker with oil or brush a thin lining on - bottom and sides.
    3. Place a single layer of potatoes on the base of the slow cooker, then add a layer of onions/garlic and keep layering till you've used them all up, finishing with a layer of potatoes.
    4. Prepare the cheese sauce and pour this over your potatoes making sure they're all covered, then scatter grated cheese over and season to taste.
    5. Cook on Low for 4 or 5 hours, till you can feel that the potatoes are tender. If your cooker tends to be a little hot like mine, give it a stir after two hours.
