    About this recipe: Sweet potatoes, onion and garlic are roasted, then drizzled with a little balsamic vinegar just before serving. Delicious and such an easy way to prepare sweet potatoes.

    Ingredients
    Serves: 4 

    • 525g chopped sweet potato
    • 1 sweet onion, cut into wedges
    • 2 cloves garlic, sliced
    • 3 tablespoons olive oil
    • 1 tablespoon balsamic vinegar, or more to taste
    • 1 pinch salt and freshly ground black pepper to taste

    Method
    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 220 C / Gas 7.
    2. Mix sweet potatoes, onion and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.
    3. Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.

    followed method for easy roast sweet potato but think 220c is too high. The onion tips burnt and the garlic had to be removed as it burnt. a lower temp would be better  -  14 Jan 2017

    Oven Roasted Sweet Potatoes Haiku: "Yay, no marshmallows! Savory sweet potatoes, glad that I found you!" Super easy recipe and delicious; I left mine in longer, stirring frequently enough that the sweet potatoes browned evenly, but my onions were a little burnt and shrivel-y, which is my bad b/c I didn't cut them into wedges, as directed. I did follow the recipe, other than apparently being a little too dainty w/ my onion cuts. Wow, these were terrific, and how nice that they weren't bathed in brown sugar or some other sticky sweetness. I squashed some of the leftovers (sans onions) for the baby, and she said "gurgle blurgle /smile" as she devoured hers too.  -  09 Apr 2015  (Review from Allrecipes US | Canada)

    I omitted the balsamic vinegar (husband hates it) but kept everything else the same. It was DELICIOUS and easy to make. I like that it is a savory sweet potato recipe with few ingredients. It's definitely on our favorites list!  -  16 Nov 2015  (Review from Allrecipes US | Canada)
