Simple Chinese noodle stir fry

    Everyone can be a Chinese master chef with this recipe! A very simple and easy to make dish. Just gather what you have in fridge and get started on these stir fried noodles!

    Serves: 2 

    • 2 packets egg noodles
    • 1 handful broccoli
    • 1 tablespoon vegetable oil
    • 1/2 onion, sliced
    • 1 to 2 sausages of choice, sliced
    • 1 large handful sliced white mushrooms
    • salt and pepper
    • soy sauce, to taste

    1. Prepare all ingredients.
    2. Bring a pan of water to the boil and cook the noodles according to packet instructions. Add broccoli to the boiling water and cook till still crisp but slightly tender. Drain well and set aside.
    3. Heat oil in a wok or frying pan. Add onion and stir fry till lightly coloured and beginning to soften.
    4. Add sausages and cook and stir till browned. Then add mushrooms and stir fry for 5 to 10 minutes, till tender.
    5. Add the cooked noodles to the pan. Season with salt, pepper and soy sauce. Toss with the veg and sausage.
    6. Remove to a serving dish and garnish with the broccoli, then serve!
