Baked chocolate cobbler

    This recipe is absolutely delicious! The molten gooey chocolate puddles mixed with a sinful dense sponge. A quick bake with things you will usually find in your cupboard!

    Serves: 8 

    • 225g butter
    • 225g caster sugar
    • 190g self raising flour
    • 1 teaspoon vanilla extract
    • 180ml milk
    • Chocolate layer
    • 200g caster sugar
    • 6 tablespoons cocoa powder
    • 240ml boiling water

    1. Preheat oven to 200 C / Gas 6. In a 20x30cm (9x13 inch) glass baking dish, melt the butter in the oven.
    2. Meanwhile, mix together 225g sugar, flour, vanilla and milk. Once the butter is melted pour the mixture over the butter in the dish, but do not stir.
    3. In a separate bowl mix together the cocoa and remaining sugar.
    4. Sprinkle cocoa-sugar mixture on top of mixture in the dish. Do not stir. Pour the boiling water on top of that, and again, do not stir!
    5. Bake for 30 to 45 minutes, till you have a nice golden brown crust on top.

    Cook's note

    Serve warm with vanilla ice cream or it's great in the winter with some custard! My recipe is inspired by a recipe by Erin Latch.
