This is the perfect thing to make if you have lots of ripe plums. Coulis are a smooth, thick sauce made by pureeing or sieving cooked fruit. This plum sauce is particularly delicious poured over vanilla ice cream.

In a large saucepan, cook the plums, brown sugar and lemon juice for about 30 minutes over medium to low heat, stirring every few minutes. When the fruit has softened; strain the plums through a sieve, forcing it through with a wooden spoon to obtain a smooth puree.
Serve warm or chilled. Keeps in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
