Apple and cinnamon sauce

    An aromatic sauce, good with roast pork sandwiches or even ice cream! Use any variety of apples you like, but I like to use a mix. This makes enough for one jam jar.

    Makes: 1 jar apple sauce

    • 1 lemon
    • 2 tablespoons granulated sugar
    • 2 sticks cinnamon
    • 4 whole cloves
    • 3 to 4 good-sized apples

    1. Cut away the zest of the lemon in large strips, avoiding the white pith. Juice half of the lemon and reserve the other half for another use.
    2. In a medium saucepan gently heat the lemon juice and add the sugar, pieces of zest, cinnamon sticks and whole cloves. Stir to dissolve the sugar.
    3. Peel, core and chop the apples into cubes and add to saucepan; stir well to coat. Cover and cook until apples are softened, about 20 minutes.
    4. Allow sauce to cool slightly and taste. Add more sugar if desired and stir to dissolve.
    5. Remove lemon zest, cloves and cinnamon, saving one stick.
    6. Mash apples with a potato masher or a fork, not too mushy, a little bit of texture is nice.
    7. Pour mixture into a sterilised jar, add the one stick of cinnamon and seal with a lid.


    This is best kept in the fridge but served at room temperature. The lemon zest is best removed from the lemon with a peeler rather than a grater as it will be removed from the sauce easier.
