About this recipe: This is an indulgent treat that everyone can enjoy. This sweet will invite you to South Africa as this is where this lovely pudding came from.

Serves: 8 

  • 600g sugar
  • 1/2 lemon, zested
  • 1 teaspoon lemon juice
  • 4 slices fresh root ginger
  • 500ml water
  • 250g plain flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 2 tablespoons butter, cut into chunks
  • 125ml milk
  • enough oil to half-fill your fryer

  1. Combine 500g of the sugar, lemon zest, lemon juice, ginger and water in a pan and bring to the boil. Boil for 10 minutes, then cool and set aside for 8 hours.
  2. Sift together the flour, baking powder, salt and remaining sugar into a bowl and rub in the butter until it looks like breadcrumbs. Add in the milk until a smooth dough is formed. Let the dough rest for 2 hours.
  3. Lay the dough onto a floured work surface and shape it into a rectangle. Cut it into about 28 strips, about 1 to 2 inches wide. Plait the dough in strips of three.
  4. Now heat your oil in a fryer. Place one or two koeksisters into the oil and fry until they are golden brown and swell up. Remove from the fryer and immediately dip in the cold syrup for 2 to 3 minutes. Remove and place on a wire rack set over a baking tray. Repeat with remaining dough.
