Combine 500g of the sugar, lemon zest, lemon juice, ginger and water in a pan and bring to the boil. Boil for 10 minutes, then cool and set aside for 8 hours.
Sift together the flour, baking powder, salt and remaining sugar into a bowl and rub in the butter until it looks like breadcrumbs. Add in the milk until a smooth dough is formed. Let the dough rest for 2 hours.
Lay the dough onto a floured work surface and shape it into a rectangle. Cut it into about 28 strips, about 1 to 2 inches wide. Plait the dough in strips of three.
Now heat your oil in a fryer. Place one or two koeksisters into the oil and fry until they are golden brown and swell up. Remove from the fryer and immediately dip in the cold syrup for 2 to 3 minutes. Remove and place on a wire rack set over a baking tray. Repeat with remaining dough.
