    About this recipe: Very yummy, and tastes like something between an omelette and a quiche. Ideal for making ahead when you need breakfast on the go.

    Ingredients
    Makes: 8 breakfast 'muffins'

    • 2 slices bacon (fat discarded), diced
    • 4 eggs
    • 1 to 2 tablespoons finely chopped onion
    • 1 small tomato, finely chopped
    • 50g grated Cheddar cheese

    Method
    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat the oven to 180 C / Gas 4. Grease a 12 hole muffin tray.
    2. Add the bacon to a frying pan over a medium heat and cook and stir until browned.
    3. Combine the remaining ingredients into a mixing bowl and mix until eggs are well beaten. Divide the mixture evenly between 8 of the greased muffin holes.
    4. Bake in the preheated oven until firm and golden brown, about 10 minutes. Remove from the heat and serve warm or allow to cool.
