About this recipe: This was a mish-mash of ingredients I had in my cupboard, but boy am I glad I made it! Serve by itself, or alongside rice or pasta.

Serves: 4 

  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 tablespoon olive oil
  • 1 tin chopped tomatoes
  • parsley, to taste
  • 50 to 100ml white wine
  • 2 smoked coley fillets
  • 5 to 6 mushrooms, sliced
  • 5 to 6 potatoes, peeled and cubed (optional)

  1. Preheat the slow cooker to High setting.
  2. Put onions, garlic and olive oil in bottom of slow cooker. Add tin chopped tomatoes and top up tin with water and add to slow cooker. Shake some parsley in over the top and add a generous slosh of white wine. Finally add the coley, sliced mushrooms and potatoes. Give all a stir to ensure coated.
  3. Cook on high for 2 to 3 hours or until potatoes are soft. Serve alongside some rice or pasta or simply by itself in a warm bowl.
