    About this recipe: Don't be afraid to try raw Brussels sprouts - they are delicious! You'll love them in this salad with apples, cranberries, almonds, sunflower and pumpkin seeds.

    Ingredients
    Serves: 8 

    • For the dressing
    • 1 shallot, minced
    • 60ml cider vinegar
    • 60ml sunflower oil
    • 2 tablespoons Dijon mustard
    • 1/2 teaspoon honey
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • For the salad
    • 535g Brussels sprouts, trimmed, halved and sliced
    • 2 apples, cored and thinly sliced
    • 60g dried cranberries
    • 30g sliced almonds
    • 50g sunflower seeds
    • 45g pumpkin seeds

    Method

    1. Whisk shallot, vinegar, oil, Dijon mustard, honey, salt and pepper together in a small bowl.
    2. Place Brussels sprouts, apples, cranberries, almonds, sunflower seeds and pumpkin seeds in a bowl; pour dressing mixture over and toss to combine.

    Substitution:

    You could use finely sliced kale, red cabbage or Savoy cabbage in place of Brussels.
