A quick addition to a Thai meal, this omelette is made with fish sauce and pork mince. Serve with steamed Jasmine rice and a crunchy Thai salad.

1 tablespoon fish sauce
100g minced pork
1 tablespoon vegetable oil

Whisk together eggs and fish sauce. Add pork mince and break apart with a fork.
Heat oil in a large frying pan or wok over medium high heat. Once hot, pour in the egg mixture and reduce heat to medium. Stir briefly, then let cook till the bottom is browned. Flip and cook the other side till browned.
