About this recipe: Gluten free, dairy-free, high protein, no added sugar banana pancakes! I had tried other banana pancake recipes and found them all too mushy and difficult to flip over. So I adjusted and combined a few recipes until I reached this one. The pancakes are light and puffy, like traditional pancakes, and kids love the banana flavour.
This is a perfect way to use up that one last stubborn ripe banana. The recipe is effortless and quick. It says 2 people but I think it serves one person perfectly. It's not very flavourful but if you put maple syrup or some other topping on it, it would be fine (all I have is butter and it's fairly bland but I'm still happy). Thanks! - 09 Feb 2016
