Flourless banana pancakes

Flourless banana pancakes

About this recipe: Gluten free, dairy-free, high protein, no added sugar banana pancakes! I had tried other banana pancake recipes and found them all too mushy and difficult to flip over. So I adjusted and combined a few recipes until I reached this one. The pancakes are light and puffy, like traditional pancakes, and kids love the banana flavour.

Serves: 2

  • 1 banana
  • 2 eggs
  • 25g (gluten free) oats
  • 1/4 teaspoon (gluten free) baking powder
  • cooking spray

Prep:10min  ›  Cook:10min  ›  Ready in:20min

  1. Blend banana, eggs, oats and baking powder in a blender until smooth, about 45 seconds.
  2. Spray a griddle or frying pan with cooking spray and heat over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

This is a perfect way to use up that one last stubborn ripe banana. The recipe is effortless and quick. It says 2 people but I think it serves one person perfectly. It's not very flavourful but if you put maple syrup or some other topping on it, it would be fine (all I have is butter and it's fairly bland but I'm still happy). Thanks! - 09 Feb 2016
