    Ingredients
    Serves: 6 

    • 2 tomatoes, cut into chunks
    • 1 large courgette, cut into chunks
    • 1 large yellow courgette, cut into chunks
    • 1/2 green pepper, diced
    • 1/2 sweet red onion, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon dried basil
    • 1/2 teaspoon salt, or to taste
    • 1/2 teaspoon ground black pepper, or to taste
    • 60ml olive oil
    • 60ml red wine vinegar
    • 3 tablespoons water

    Method

    1. Place tomatoes, courgettes, green pepper, red onion, garlic, basil, salt, and black pepper in a large bowl; add olive oil, vinegar, and water. Toss to coat. Chill in the fridge for about 1 hour before serving.
