And also...what better time is there for a warm drink served with a piece of cake, sitting in the sofa with the perfect company. The recipe for today is the perfect match for this season: apple and walnut cake.
80g demerara sugar (or a honey/maple syrup equivalent)
100ml rapeseed oil
200g self-raising flour
2 teaspoons baking powder
100g walnuts, roughly chopped
2 apples, cored and cut into squares

Preheat the oven to 180 C / Gas 4. Grease a 22cm cake tin and line with baking parchment.
In a bowl, combine the eggs and the sugar, mixing very well. Add the oil, the flour and the baking powder, mixing everything very well. Finally, add the walnuts and the apples and mix up carefully with a spatula or a spoon. Pour the mixture into the prepared cake tin.
Bake in the preheated oven for about 40 minutes or until risen, golden and a skewer inserted into the centre comes out clean.
It is an addictive cake...you can only stop when you finish it. :)
