Vegan raw coconut vanilla delights

About this recipe: No sugar, raw vanilla balls full of goodness and energy, enjoy! Serve as a tasty snack throughout the day or as an after dinner treat.

Makes: 20 balls

  • 150g chopped cashew nuts
  • 90g desiccated coconut
  • 3 dates (soaked if hard)
  • 1 fig
  • seeds from 1 vanilla pod
  • 20ml coconut oil
  • 20ml carob syrup
  • pinch of salt

  1. Combine the cashews, 30g coconut, dates, fig, vanilla, coconut oil, carob syrup and salt in the bowl of a food processor and pulse until the mixture sticks together.
  2. Gently form into little balls then roll in the remaining coconut; lay on a tray lined with greaseproof paper. Place in the fridge to chill until time to serve.


If you do not have a vanilla pod, substitute with 1 teaspoon vanilla extract.
