White chocolate fudge peanut butter cookies

    My first ever recipe! I love super indulgent goodies and I made these cookies to satisfy all my cravings at once. These are soft and perfectly gooey.

    Makes: 24 cookies

    • 110g butter, softened
    • 130g peanut butter
    • 220g light brown soft sugar
    • 100g caster sugar
    • 2 medium eggs
    • 2 tablespoons golden syrup
    • 2 tablespoons water
    • 2 teaspoons vanilla extract
    • 310g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 85g fudge chunks
    • 100g white chocolate drops

    1. Preheat oven to 190 C / Gas 5.
    2. In a large bowl, cream together the butter, peanut butter, light brown soft sugar and caster sugar until smooth. Beat in the eggs one at a time, then stir in the golden syrup, water and vanilla. Combine the flour, bicarbonate of soda and salt; stir into the peanut butter mixture. Fold in the fudge chunks and white chocolate drops. Heap spoonfuls about 7cm apart onto ungreased baking trays.
    3. Bake for 12 minutes in the preheated oven, or until edges are golden. Remove from the oven and allow cookies to cool for 1 minute on the baking tray before transferring to wire racks to cool completely.
