This is insanely delicious. Reasonably good for a low carb, high fat diet, this is a great dish to serve alongside a main dish. Due to the high fat, and the carbs in the squash, this is a small portion side dish and this recipe serves four.
Bring a saucepan of water to the boil over a high heat. Add the squash and boil until just tender but still holding its shape. Drain and set aside.
Meanwhile, fry the bacon in a frying pan over a medium heat, remove from the pan and chop.
Melt the coconut oil in the same frying pan that you cooked the bacon in, you may not need the extra fat here if your bacon has released a lot. Add the chopped bacon and squash back in and cook and stir for a few minutes. Finally, sprinkle in the chilli and season with salt and pepper. Serve.
