Delicious omelette

    Made this in HE one day - could have been nicer, so I put a twist on it. Add toppings of your choice such as ham, cooked chicken or chopped tomatoes.

    Serves: 1 

    • 2 eggs
    • 1/2 to 1 teaspoon chopped chives (optional)
    • 1 pinch salt and pepper
    • 1/2 teaspoon oil
    • 1 to 2 tablespoons chopped ham (optional)
    • 1 handful grated cheese, of your choice
    • 1 handful chopped cooked chicken (optional)

    1. Whisk the eggs until fluffy, add in the chopped chives (if using) and a pinch of seasoning.
    2. Warm the oil in a frying pan over a medium heat and pour in the eggs. Move the pan around to ensure that the eggs spread out over the base of the pan and cook for a few minutes. Flip the omelette and cook for a few minutes more.
    3. Add the toppings to the omelette then either finish up underneath a hot grill before folding over, or cook a minute or so more in the pan before turning over into a semi-circle and serving. Enjoy!


    Add to tomatoes as a topping for extra flavour.
