About this recipe: Apple sponge cake from Germany, topped with sliced apple. Enjoyable for the whole family :). Ideal for making in autumn when apples are in season.

Serves: 8 

  • 100g self raising flour
  • 100g butter or margarine
  • 100g caster sugar
  • 2 eggs, beaten
  • 2 apples, peeled and cored
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons demerara sugar

  1. Preheat oven to 200 C / Gas 6.
  2. Grease and line an 18cm (7 in) metal cake tin.
  3. Sieve flour into a large bowl, add butter (or marg) and caster sugar. Whisk until creamy (I used an electric whisk for quickness). Put the mix into the cake tin a spread evenly. Cut up the apple into thin slices and add on top of the cake. Mix the cinnamon powder and demerara sugar together and sprinkle over the top of the cake.
  4. Bake in the preheated oven for 10 to 15 minutes or until risen and firm and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin for 10 minutes, before transferring to a cooling rack to cool completely.
