- Pre heat oven to 200 C / Gas 6.
- Place butter and sugar in a large bowl, mix well. Add the egg and vanilla extract and mix again. Sieve in flour and salt and mix everything thoroughly together until you have a dough. Add the chocolate chips (or whatever you are using) mix together.
- Roll the mixture into balls (about 2cm by 2cm, or desired size) and place on a baking tray lined with baking parchment. Try not to put the dough balls too close together and allow room for spreading.
- Bake in the preheated oven for about 7 to 10 minutes or until blushing golden brown. Remove from the oven and allow to cool on the tray for a few minutes before transferring to a cooling rack to cool completely.
Leave them out at room temperature for a few hours after baking for best results.
Leave out the salt if you are using salted butter.
