Melting moment biscuits

About this recipe: These are biscuits worth dying for. A biscuit rolled in oats and topped with a delicious glace cherry, is sure to be a hit at any tea-party. Even though, this is November, and not the right season for tea-parties, it's still a great snack or lunch-box treat.

Makes: 20 melting moment biscuits

  • 280g unsalted butter, softened
  • 170g caster sugar
  • 1 teaspoon vanilla extract
  • 280g self-raising flour
  • 3 to 4 tablespoons rolled oats
  • glace cherries, chopped in half

Prep:30min  ›  Cook:10min  ›  Ready in:40min

  1. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
  2. Cream the butter and sugar together till pale and fluffy. Add the vanilla extract and beat well. Add the flour and knead to form a dough ball then separate the dough into about 20 smaller balls. Spread the oats out onto a saucer then roll the balls in oats. Add half a cherry on top.
  3. Bake in a preheated oven for 10 to 15 minutes until golden brown. Remove from the oven and cool for about 10 to 15 minutes and transfer to a wire rack to cool completely before serving.

You might have to mix the flour very well to help form a dough and use your hands to make the dough. This will become very messy.
