Classic vanilla sponge cake to enjoy

    This is very easy and will take only about 35 to 40 minutes. Great treat for the family! Try using my recipe for 'easy peasy buttercream' listed in the ingredients.

    Serves: 10 

    • 200g caster sugar
    • 200g butter, softened
    • 4 eggs, beaten
    • 200g self-raising flour
    • 1 teaspoon baking powder
    • 2 tablespoons milk
    • 3 to 4 tablespoons easy peasy buttercream
    • 3 to 4 tablespoons strawberry jam
    • icing sugar to dust

    1. Preheat the oven to 190 C / Gas 5. Grease two 20cm sandwich tins and line with greaseproof paper.
    2. Beat the sugar, butter, eggs, flour, baking powder and milk together until you have a smooth cake mixture. Divide the mixture equally between the two prepared sandwich tins.
    3. Bake in the preheated oven for 20 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and turn out onto a cooling rack to cool completely, upside down.
    4. Place one of the two cakes on a serving plate then spread buttercream and jam on top. Sandwich the second layer on top then dust with icing sugar. Slice and serve.

    Easy recipe. Light and fluffy. Must turn out immediately to avoid any sinking. One of mine needed an extra two mins in the oven. I will know better next time. Still looks fab. Also I added a little vanilla extract.  -  19 Apr 2016
