Start by washing your hands. Get out a sauce pan for sweet potato, a saucepan for vegetables. (Can cook all the veg except sweet potatoes together or in seperate sauce pan. It's up to you.) Put water into the kettle and turn it on to boil. This may need to be done a few times depending on how many pans you use.
Using a potato peeler take the skin of the carrots and potato. Once done chop the carrots however you like and set aside. Next chop the sweet potato into approx 1cm cubes and place into a saucepan of boiling water. You want to cook them on a high or medium heat for about 15-20mins or until soft.
Next place the carrots in a pan of boiling water as well. While the potatoes and carrots are cooking take out the broccoli and cauliflower. Cut them up into florets and place in boiling water as well. They should be ready in 10 mins or a little longer if, like me you like them soft.
Meanwhile take out courgette trim the ends off and either cook whole or slice into rounds or strips, wash before use. To cook: Cook in boiling water or steam for 2 to 5 minutes, depending on size, until tender. Or fry courgette slices for 5-10 minutes until tender.While cooking take your sweetcorn and open the tin. To cook either Hob - From Ambient. Empty contents into a pot and bring up to the boil.; Microwave - From Ambient. Empty contents into a dish, cover and heat for 1-2 minutes. If you want you can skip cooking the sweetcorn and have them cold.
Just before you serve up cut some french stick into slices and put some butter on them.
Once all is cooked drain the water from each pan and mix all the vegetables together and serve in a bowl.
If you wanted you could add some pasta or meat for a more filling meal and have for dinner instead of lunch. You could swap the french bread for garlic bread. It's entirely up to you to.
